Fish Stock Recipe

Here is a simple quick method to use up those extra fish bones. 

4 onions, chopped
2 carrots, chopped
2 stalks of celery, chopped
6 sprigs of thyme
6 sprigs of sage
6 pieces of black peppercorn
2 bay leafs
1 lemon, halved
1lb fish trim

In a large stock pot, add your onions, carrots, celery, herbs and citrus. 
Place fish bones on top and just cover with cold water.
Bring up to a boil and reduce to a simmer for 2-4 hours.
Cool down and store in the fridge for up to 4 days, or in a freezer for 6 months.
