Ceviche: A Classic

Now, I know a lot of people aren’t in for the idea of “raw” fish. Here’s where it changes. This recipe is called Ceviche, a latin dish made up of raw seafood ingredients that are cooked in the acid from different citrus juices. Here is a variation that I’m sure will please even the pickiest of eaters! I recommend using salmon or bass for this dish.

1 pound fish, small cubes
1 lemon, juiced
1 lime, juiced
1 orange, juiced
1 grapefruit, juiced
1 tbsp olive oil
½ bunch chives, chopped
½ jalapeno, small dice
½ red onion, small dice
½ cucumber, small dice
1 tomato, cleaned and diced

Mix together citrus juices, olive oil and chive. 
Add chopped vegetables to fish. 
20 minutes before serving, toss in the dressing. 
Let it refrigerate and serve ceviche immediately.
